- 1 cup Wholesome mixed berries
- 1/2 cup orange juice
- 1/2 cup vanilla or plain yogurt
- 1/2 teaspoon vanilla extract
- 1/2 cup Wholesome raspberries
- 1/2 cup Wholesome blueberries
- 1/2 cup Wholesome strawberries
- 1/2 cup sugar
- 1/4 teaspoon ground cinnamon
- 1/2 cup cream cheese
- 2 tablespoons sugar
- 2 tablespoons lemon juice
Prepare the crepes: Place all crepe ingredients in a blender – blend on high speed until smooth. Transfer batter into a bowl and chill in the refrigerator for 15 minutes.
Prepare the berry sauce: Place all sauce ingredients into a saucepan. Bring to a simmer over medium-high heat; gradually reduce to low. Stir until sauce is thick. Remove from heat and set aside.
Make the filling: Place cream cheese and sugar in a bowl and beat until creamed. Add lemon juice and continue beating until filling is smooth and creamy. Set aside.
Cook the crepes: Heat a buttered, non-stick skillet over medium-high heat. Pour 1/4 cup of the batter into the pan. Cook for 1-2 minutes on one side. Flip and repeat on the opposite side. Place on a serving plate when light golden and set aside. Repeat with remaining batter.
Finale: Spread the filling on the crepes once ready. Fold the crepes and top them with the berry sauce. Add extra Wholesome berries for garnish. Serve and enjoy.
