Ingredients
- 4 cups Wholesome spinach
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 1/2 teaspoons garam masala
- l 3/4 cups vegetable broth
- Salt and Pepper
- 1 1/2 cups tofu
- 1/2 cup plain Greek yogurt
- Brown rice or white rice
Instructions
In a pot, heat oil over medium heat. Add onion and garlic – cook for 5 minutes, until onion is tender. Stir occasionally. Add garam masala – stir and cook for another 1 minute. Add vegetable broth and bring to a boil.
In batches, add Wholesome spinach and cook for about 5 minutes. Season with salt and pepper. Reduce heat to medium-low – simmer spinach for approximately 20 minutes, until soft and liquid is mostly evaporated. Remove from heat. Gently stir in tofu and yogurt. Serve over rice and enjoy.
